I took Isaac grocery shopping with me the other day and heard all about how deprived he is. "Why can't we get white tortillas?" "Why do we have to get whole wheat pasta?" "Why can't we get white bread?"
Because I am racist.
I decided to try to be a good mom today and surprise the kids with cookies for their afterschool snack. Cookies my way, of course. What they don't know won't hurt them.
Peanut Butter Cookies a la Lindsay
1/2 cup sweet potato puree
1/2 cup natural peanut butter
1 1/2 cup flour (some whole wheat)
1/4 cup flaxseed
1/3 cup sugar
1/4 cup (local) honey
1 (cage free) egg
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. vanilla
Truvia for rolling them in
In a mixing bowl combine sweet potato and peanut butter with an electric mixer for 30 seconds. Add 1/2 cup flour, flaxseed, sugar, honey, egg, baking soda, baking powder and vanilla. Beat until combined. Beat in remaining flour. If necessary, cover and chill dough until easy to handle.
Shape dough into 1 inch balls. Roll in Truvia. Place on cookie sheet. Flatten criss-cross style with fork.
Bake in 375 degree oven for 7 to 9 minutes, or until browned. Cool on a rack.
These were a big hit around here!
