Noodle Kugel--this one's for you, Becca!



This is actually a Jewish food--I think they eat it at Passover. Whenever they eat it, it is good--kind of like a weird sweet noodle casserole. This is my healthy version. The original recipe calls for full-fat everything and a whole stick of butter!! Oy gevalt! The cottage cheese is a great source of protein and the whole wheat noodles provide your carbs, so you can enjoy my version without guilt. Just watch out, though, your kids will devour it!! 16 oz. fat free cottage cheese
16 oz. fat free sour cream
3/4 cup sugar or Splenda
5 egg whites
2 TBSP butter
1 TBSP vanilla
1/2 cup sweet potato puree (optional)
1/4 cup ground flaxseed (optional)
1 pkg. whole wheat egg noodles
1 TBSP cinnamon

Preheat oven to 350 degrees. Mix all ingredients except noodles and cinnamon until well blended. Stir in noodles. Spoon into a 13 x 9 inch baking dish; sprinkle with cinnamon. Bake 50 minutes to 1 hour or until center is set. Cool at least 10 minutes before cutting to serve.
