Swedish Pancakes, our style

I usually make 1 1/2 times the recipe for my four kids.

4 eggs
1 cup skim milk
1/2 tsp. salt
1 TBSP vanilla
1/8 cup sugar
1/8 cup Splenda
3/4 cup white flour
1/2 cup whole wheat flour
1/4 cup ground flaxseed
2 TBSP chia seeds
1/2 cup pureed sweet potatoes

Mix eggs, milk, salt and vanilla with an electric mixer. Add the rest of the ingredients. Pour onto a coated skillet. Cook on both sides. Serve!
