Breakfast Muffins
Good Morning! The kids are having these muffins with fruit smoothies, fresh peaches and light string cheese this morning.
Sweet Almond Muffins
1 1/2 cups flour (I'm out of wheat, so I had to use white!)
1/2 cup sugar or Splenda
1 1/2 tsp. baking powder
1/4 tsp. ground nutmeg
pinch salt
1/2 cup green puree
1 egg
1/2 cup milk
1/3 cup applesauce
1/4 cup ground flaxseed
2 TBSP chia seeds
1/2 tsp. almond extract
1/2 cup chopped almonds
Cinnamon sugar
Combine dry ingredients. Add puree, egg, milk, applesauce, seeds and extract. Mix in most of almonds. Grease muffin tins (with or without liners you must use spray!) Fill 2/3 full. Sprinkle with cinnamon sugar and remaining chopped almonds. Bake in 350 degree oven for 20 to 25 minutes.
