Adapted from a "Eating for Life" recipe.
2 cups uncooked oats (non-instant)
12 egg whites
2 cups low-fat cottage cheese
1/2 tsp. vanilla
1/2 tsp. cinnamon
1/2 cup sweet potato puree
2 TBSP Agave nectar
In a blender combine all the ingredients. Blend until smooth. Pour batter, 1/4 cup at a time, onto a hot skillet. Flip when bubbly and cook until golden brown. Serve with maple syrup. (This makes 4 servings.)
